I may never be able to leave the Pacific Northwest for no other reason than I don’t know what I would do without my cheese.  My favorite is the Pepper Jack but they also make fantastic cheddar.  I’ve always been a big cheese eater (except for american cheese, that stuff is mostly vile) but this stuff is fantastic.  Next spring I’m going to try to talk Derek into making the drive to Tillamook to visit the cheese factory…Mmm…cheese…
